What is sourdough?

Sourdough is bread leavened with a fermented flour-and-water starter instead of commercial yeast, which gives it a tangy flavor and chewy crust.

How long does fresh bread keep?

Crusty artisan loaves are best the day they are baked; after that they keep in a paper bag for a day or two, or freeze well sliced.
